Yep, every day is Talk Like a Pirate Day to me.

I'm currently researching the breed and breeders in order to prepare for taking the plunge. In the past I've fostered two rotties and one mastiff/pit mix whom I think was part Presa, since he looked just like the more athletic Presa in the 'tree trunks for legs' thread. So I have some experience with strong-willed, stubborn dogs, but still want to learn as much as I can so I can be a good master for what thus far seems like a challenging but amazing breed.

Welcome! Three recommendations: research, research, and research when it comes to breeders! There are a LOT of opportunistic, unscrupulous breeders out there now as the Presa becomes more and more popular. Even among reputable breeders there are a lot of different bloodlines with very different focus when it comes to temperament. Health testing/guarantee is, of course, a must! Good luck with the puppy hunt!
