I've done a few big pieces for Denna like that... I just toss it in the middle of the yard and let her figure it out.
Sometimes she goes for it right away, other times she wants to bury it (I'll put it back in the cooler in that case... don't want the rats or coyotes to come looking for it)... sometimes she'll circle it and then lay down to stare at it for a while (anywhere from 30 minutes to an hour) before she decides to start gnawing on it.
The first few times, I would sit outside with her, and give her encouragement to sniff and lick at it, so she knew it was for her... she's better now at knowing what she likes, and what to do with it.
When she's done with it (and goes to bury it or just walks away), I'll put it back in a cooler we keep on the porch just for thawing dog food, and then give it back again for another meal later.
If the deer's been hard frozen for a few weeks, any parasites should have been killed. But good that the butcher checked, anyway!
