what is the percentage of protein in raw diet compared to dry kibble?

Can somebody explain the differences of the protein percentage of a raw diet and dry commercial kibble?

Take Orijen Puppy Dry. It has 38% Protein.

And I am feeding turkey, Chicken Liver, Beef Heart, Pork shoulder, Liver,Kidney, MackerelChicken breast, Pork Loin,Chicken Gizzard in a 80/10/10 ratio.

The reason is that large breed puppy are preferably fed at less than 21% protein and since I am feeding raw, how would that be explain for raw diet?

The key is to put both meals on a common, dry matter basis.

Kibble content is normally give as %-dry-matter.
Orijen is listed as 10% moisture, so 38% / 90% dry = 42% protein DRY

From Wikipedia: "Adult mammalian muscle flesh consists of roughly 75 percent water, 19 percent protein, 2.5 percent intramuscular fat, 1.2 percent carbohydrates and 2.3 percent other soluble non-protein substances."

SO... 19 parts in 100 - WET, but 19 parts in 25 - DRY = 76% protein
That's the 80% part of what you're feeding (80/10/10)... and really, the organ 10% is probably not far off... so now we're talking 76% protein in 90% of the meal, or 68.4% protein overall

BUT - The 21% / low protein diet recommendation is no longer the current thinking... now it's more about restricting overall calories and also limiting calcium and phosphorus (i.e. bone). You want a kibble with <1.5% calcium and <1.2% phosphorus (the lower the better).
