New Mastiff owner

Hello, I am a new Mastiff owner. My wife and I rescued a 9 month old male named George Two weeks ago. He has never had a home to love or be loved and has been abused by people and other animals. He has not had aggression towards people or animals he plays with our 13 month old lab Sam and thinks every person wants to pet him. (he would have more people pet him if he would not bark) loves the attention given by any one willing to give it. Kids the most.
We live in an Apartment on the third floor. We take him on a one mile round trip walk in the morning and the evening. We have a large woods next to the apartment and the owner gave me permission to walk the dogs freely so no leash is needed. Yes he never been trained but doesn't run away from us. He may chase the lab when he feels like it but for the most part just walks at our side or a little behind. Is this to much exercise for him?
Lately during the day when my wife takes him out for bathroom break he refuses to climb the stairs. Treats are not a help no toy will bring him up either. Tipps on things to try would be welcomed!
George saved me 2 days ago from a large hybred dog that meant me harm I did not want him to protect me or want him to be mean. He knock me over and knock the dog down laid on the dogs neck and chest with its neck in its mouth. He never bit down hard just warned this 100 thing! I was able to call George off and made the owner get control of his dog. I am suprised shocked and thankfull he saved me. NO I DID NOT TEACH HIM this he did not get bit.
I know George needs training I mean he house trained but I know I have to train him right because some where in his brain he knows he was abused by people (men) training tips would be so welcomed I want this dog to have his home I owe him a large piece of my hide
